Ingredients:


  • 2 tablespoons of avocado or coconut oil
  • 16 ounces of sour cream
  • 1 block of cream cheese
  • 2-3 tablespoons of minced garlic
  • 2-3 cups of spinach
  • 3 cups of shredded cheddar cheese
  • salt, pepper, garlic salt
  • parmesan cheese to top off


Directions: preheat oven to 425 degrees.  Add oil, sour cream, cream cheese, minced garlic, spinach, and cheddar cheese to a pie dish.  Add salt, pepper, and garlic salt.  Mix well.  Smooth top to smooth.  Then add parmesan cheese to the top.  Add salt, pepper, and garlic salt again.  Put in oven covered with aluminum foil and bake 15-20 minutes.  Then uncover and cook another 10-15 minutes until edges are nice and brown!  Enjoy with peppers!

We were headed to a friend's house for a hurricane "party"...can I say that?  Not making light of the hurricane, but a way we could get together, get our kids together and get some crazy energy out since they've had cabin fever since this hurricane Flo came around, AND also pray for the Carolinas and surrounding areas.  Not making us sound super religious because let's be honest there was wine involved at said party.  It was a great time of fellowship, and we had a blast!  The biggest surprise?  I made too little of this Keto Spinach Dip!  It was gone in a matter of minutes friends!  Minutes!  So here is this amazing recipe!
